Coconut Shrimp Cakes

No fooling--these were delicious!  I have been saving this recipe for a Friday in Lent, since I've already indulged in tasty fish tacos on a previous Friday.  Captain was home to try this new dish with me.  Not really a penance for our tastebuds!
