The Verbicks were back in town--having moved to Detroit three months ago, and they brought us "Orange Blossom" tea for making a lovely pitcher of iced tea! (You know that's the name of our favorite fiddle tune, too). We enjoyed having them over for a grilled-out lunch, despite a last minute trip to True Value Hardware for propane refill. Damon was a big help, and gave us some engineering advice on the broken lawn mower. I made a piano display for Meggar's benefit.
Later, we were joined in the pool by the Carpenter six-pack, so it was good that Captain had installed a new diving board. Our old one would have broken completely with one more use. Father Benjamin also came around for part of the afternoon.
Everyone had a good time especially when Lesa brought out the coconut popsicles to go with my Mint Chocolate Chip Cookies: (they come out perfectly every time)
1 stick soft butter
3/4 c. sugar
1 egg
1/2 t. peppermint extract
1 c. flour
1/3 c. cocoa powder
1/2 t. baking soda
1/2 c. mini chocolate chips
Cream together butter and sugar. Add egg and peppermint; beat well.
Sift together dry ingredient and gradually add to the mixing bowl until combined.
Stir in chocolate chips last.
Drop by teaspoonful on ungreased cookie sheet.
Bake at 375' F for 8-10 min. until firm around edges and still soft in the middle.
