Recipe for Ratatouille

Watching Domitille, I am attempting to jot down her recipe for "Real French-style" version of this classical dish.
Ratatouille
1 eggplant (aubergine), peeled
2 zucchini (courgettes), half-peeled
2 onions
3 medium tomatoes
1 green bell pepper
1 red bell pepper
Chop all vegetables. Saute slowly in plenty of aromatic olive oil. Season generously with thyme, and salt and pepper to taste.
