This week, I taught the homeschol boys in my class how to make Breakfast: scrambled eggs, sweet bacon, French toast sticks, overnight coffee cake, and pumpkin pancakes. Perfect weather for this recipe:
Pumpkin Pancakes
2 c. flour
1 T. baking powder
½ t. salt
2 T. sugar
1 t. pumpkin pie spice = 1/2 t. cinnamon, ¼ t. cloves, ¼ t. ginger
2 eggs
1 ¾ c. milk
3 T. melted butter
½ c. pumpkin (puree or canned)
